英國人為做茶(奶茶)時先下下奶或茶的問題,爭論了百多年。但好像從沒有人爭論過過做公仔麵(方便)時的程序。筆者的經驗是先燒水,待水滾後,放下麵條弄到半熟(經驗直覺),過冷河,再燒水,水滾後放入調味料,再滾後方放入麵條是最好吃的。其他方法的如水滾後把調味和麵同時放下、在麵熟時才放調味料或最懶的調味料麵水同時下,然後一起燒等,烹調出來的公仔麵絕不好吃。筆者亦曾依蔡瀾的方法,水滾後方入蝦米,然後再放入”牙”菜及麵條。果然甚好吃。若弄壽挑牌等含鹼水南方麵(北方人做麵並不用鹼水),不妨把過冷河前的燒水留起,用來滾菜,菜的顏色一定甚為碧綠。(這也時蔡生的經驗)。在燒杯麵時,千萬不要放進微波爐,味道和下滾水燒出來的絕不可同日而語,若能下一兩片火腿更是甚妙。弄方便麵有必要弄得麼復雜嗎?筆者的答案是,吃方便麵己是佷慘的事,為甚麼不對自己好一點?
